- Cauliflower Rice - I kept this recipe low carb by opting for cauliflower rice. However, traditional rice or wild rice work equally.
- Mango - This adds a fresh sweetness to the homemade salsa recipe. Prepare it for any salmon recipes with mango.
- Tomatoes & Green Chiles - I always keep small cans of tomatoes with green chilies in my pantry to add a kick of flavor to any recipe.
- Red Onion - I prefer red onion in my homemade mango salsa recipe. You can swap it with white onion if that is all you have on hand.
- Maple Syrup - This adds just the right amount of sweetness to my BBQ glazed salmon recipe.
- Lime - I used the juice and zest to kick up that citrus flavor that balances the BBQ seasonings.

BBQ Bowls - Salmon with Mango Salsa Recipe
Equipment
Ingredients
BBQ Salmon
- 2 lbs salmon, fillets (skinless)
- 1 ยฝ tablespoons sugar, coconut (brown sugar works too)
- 1 ยฝ teaspoons onion powder
- 2 teaspoons paprika, ground
- 1 ยฝ teaspoons garlic powder
- ยฝ teaspoon chili powder
- ยฝ teaspoon sea salt
- 1 tablespoon extra virgin olive oil
Mango Salsa
- 2 mangoes (peeled and diced)
- ยผ cup cilantro (rough chopped)
- ยผ cup onion, red
- 1 10-ounce can tomatoes and green chilies
- ยฝ teaspoon maple syrup
- 2 tablespoons lime, juice
- ยฝ teaspoon lime zest
- 1 pinch sea salt (to taste)
Serve With:
- 2 cups cauliflower rice
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic, fresh
Instructions
- Preheat oven to 475 degrees Fahrenheit. Line a baking sheet with parchment paper. Set aside.
Cauliflower Rice:
- Start by preparing your cauliflower rice. If you only have whole cauliflower, check out here on instructions to rice your cauliflower.
- In a large pan, saute rice with olive oil. Cook for 5-7 minutes, stir frequently. Season with salt and pepper to taste. Set aside.
Salmon:
- In a small mixing bowl, mix spices for salmon with olive oil. Brush over salmon pieces. Place salmon on parchment lined baking sheet.
- Bake in oven for 8-12 minutes until the fish is opaque and flaky.
Mango Salsa:
- While the salmon is baking, prepare the homemade mango salsa recipe. Toss all salsa ingredients in a bowl and mix together. Adjust the salt for taste.
Serve:
- Serve over cooked rice and garnish with toasted sesame seeds, green onions, and mango salsa over top. Fresh squeeze of lime juice for added flavor.
