Vegan Pumpkin Pasta Recipe with Crispy Sage Leaves
Ingredients
- 1 pound pasta, gluten-free
- 1 ½ tablespoons extra virgin olive oil
- 2 teaspoons garlic, fresh (Minced)
- 1 cup pumpkin, puree
- 1 13.5 ounce can coconut milk
- ½ teaspoon paprika, ground
- 1 teaspoon turmeric, ground
- ¼ teaspoon black pepper, ground
- ½ teaspoon sea salt
- ⅛ teaspoon nutmeg, ground
- 1 tablespoon lemon, juice
- ⅛ teaspoon cayenne pepper
- 4 leaves sage, fresh (Or ½ teaspoon dried sage)
- ½ cup cheese, parmesan-style (Vegan and dairy-free)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Over medium heat, heat the olive oil and garlic. Saute for 1 to 2 minutes.
- Add in the pumpkin puree, coconut milk,
