I love quick 30 minute dinner recipes, and this gluten-free baked chicken parmesan recipe is definitely a classic I make on repeat. All the classic flavors of a healthy homemade family friendly dinner. I guarantee you will love this classic Italian dish.
Fun fact, I grew up most of my life in New Jersey, so we take our Italian food seriously over there. Although I am not Italian, my uncle married into a traditional Italian family, and they owned a thriving restaurant. Many family gatherings were held there, and the food was elite. One of my earliest memories was enjoying a plate of chicken parmesan.
I had to recreate a healthier baked version of chicken parmesan, and I truly believe you would have to agree this is absolutely delicious. Pair it with a yummy salad or make extra for a low carb lunch idea. I was inspired by my cajun chicken pasta recipe, which is another client favorite.

To make this simple classic chicken parmesan recipe, you will simply need to gather a few key ingredients to create a delicious, family friendly 30-minute dinner recipe.
- Chicken Breast - I recommend using skinless, boneless chicken breasts. a great source of protein, but rich in vitamins and minerals. Iron, B vitamins, potassium, phosphorus, zinc, magnesium, and selenium. Chicken is also a great source of B vitamins, which help in energy production, as well as help form red blood cells in the body.
- Mozzerella Cheese - Shred your own like I do, or buy packaged pre-shredded instead.
- Parmesan Cheese - I prefer to grate my own quality parmesan cheese, but you can buy pre-grated at your grocery store.
- Extra Virgin Olive Oil - This is a great neutral flavored oil. You can also use avocado oil.
- Egg - This helps the breading stick to the chicken, so it's a must.
- Gluten Free Breadcrumbs - I prefer using gluten-free panko breadcrumbs to get the crispiest breaded chicken without any gluten.
- Marinara Sauce - Use your favorite homemade or jarred sauce. Iike Rao's homemade marinara sauce.
- Spices - A blend of Italian spices I used is oregano, basil, garlic powder, onion powder, sea salt, and pepper.
- Fresh Herbs - I like to top my baked parm with fresh parsley for presentation and taste.

❓ How to Prevent Soggy Chicken Parmesan?
Nobody likes soggy chicken parmesan. That is why I chose to bake this in two steps to ensure the crispiest chicken cutlets you have ever tasted.
I also opted to use gluten-free panko breadcrumbs. The panko coating is a Japanese breadcrumb that absorbs less oil, which results in a crispy, crunchy coating to your chicken parm recipe.
👩🍳 Instructions
- Begin by cutting the chicken breasts lengthwise into 2 pieces. Optional to use 4 thin sliced chicken breasts instead.
- Preheat the oven to 400 degrees. In a casserole baking dish, spread out the 2 tablespoons of olive oil evenly into the bottom of the dish. Set aside.
- In one bowl, whisk the egg. Set aside.
- In a separate bowl, combine the breadcrumbs, garlic and onion powder, sea salt, pepper, oregano, and basil.
- Begin by dredging each chicken breast into the egg and then the breadcrumb mixture. Lay each prepared chicken breast evenly into the casserole dish. Place into the oven for 10 minutes.
- Remove the casserole baking dish from the oven. Flip the chicken breasts and spread the marinara sauce evenly over the top. Sprinkle the shredded mozzarella and parmesan cheese over the top.
- Return the casserole dish back into the oven for 20 minutes more. Remove and top with fresh chopped parsley. Serve immediately.
