When most people think of bananas, they expect potassium-rich, right? Yes, bananas are a rich source of potassium, but they are also brimming with other important vitamins and minerals that our bodies need to function at their best.
I love to serve my banana bread with dark chocolate chips, because it tastes like a tasty dessert, but is actually a healthy treat. Who doesn't like the sweet taste of banana bread mixed with delicious dark chocolate chips?
Potassium in Bananas Can Help Benefit Cardiovascular Health!
Bananas help aid with dry, flaky skin. Bananas contain the antioxidant lutein, which boosts the elasticity of the skin, as well as increases sebum production. This helps the skin lock in moisture.
This recipe is rich in potassium, which helps replenish the necessary electrolytes within the body.
Preheat oven to 350 degrees. Grease a 9 X 5-inch loaf pan with nonstick cooking spray.
STEP 2
Combine the wet ingredients first. In a medium-sized mixing bowl, mash 3 ripe bananas. Add in the brown sugar and mix until smooth. Mix in the 2 eggs or flax eggs if vegan. Mix in the vanilla extract and coconut oil until well combined.
STEP 3
Combine the dry ingredients. In another mixing bowl, combine the gluten-free flour, baking powder, baking soda, salt, and cinnamon. Pour the wet ingredients into the dry ingredients bowl and combine until the batter is well combined. Don’t over mix. Gently fold in the chocolate chips.
STEP 4
Pour the batter into the loaf pan and sprinkle the top with extra cinnamon. Bake until golden brown, which is approximately 50 to 60 minutes, depending on your oven. Check with a toothpick, and if it comes out clean, it is done.
STEP 5
Allow the banana bread to cool before slicing. Then serve gf banana bread with any nut butter or jam of choice.

Banana Bread Storage Tips
Store at room temperature for two to four days. Wrap it tightly in plastic wrap to protect against excess moisture. You can also transfer to the freezer for up to three months. I suggest you slice the banana bread before freezing, so you can take out a slice when you are in the mood for some delicious banana bread. Simply warm-up for 15 minutes in a 350-degree oven, and top with some delicious nut butter.
