My love for Korean recipes started after discovering that my DNA testing confirmed some Japanese and Korean ancestry, in addition to my other ethnic Eastern European background knowledge from my parents. So, I leaned into learning more about the culture and food. I love to take inspiration from my cultural background.

💖 Why You'll Love This Homemade Korean Strawberry Milk Recipe?
- No Refined Sugars - You won't find any of your typical white sugar in this healthier version of Korean strawberry milk. I swapped it out for dates instead.
- Only 5 Ingredients - How easy is this milk? With only 5 simple ingredients, you can whip together a homemade Korean strawberry milk.
- Easy to Make - All you need is a blender to make this tasty iron rich drink recipe.
🥣 Strawberry Beet Milk Recipe Ingredients
To make the most delicious iron rich strawberry milk recipe, you will simply need to gather a few key ingredients that create a yummy homemade Korean milk.
- Strawberries - I prefer strawberries in this homemade milk recipe. They are a more neutral tasting berry, while still adding that sweet berry flavor. Fresh or frozen strawberries both work well.
- Beets - Beets are rich in iron, which is important if you struggle with nutrient deficiencies or are prone to low iron levels. Cooked or raw beets both work well with this beetroot iron rich milk recipe.
- Medjool Dates - The natural sweetness of dates is a great swap for refined sugar. You also gain the additional benefits from minerals like magnesium and potassium.
- Milk of Choice- I used unsweetened coconut milk in this recipe. However, oat milk or almond milk work well too. Any dairy-free or plant-based milk keep this recipe vegan friendly.
- Sea Salt - A pinch is all you need to balance out the sweetness of the strawberries and beets.
See the recipe card for quantities.
❓ Can I Use Cooked Beets Instead of Raw in This Strawberry Milk Recipe?
If you don't have raw beets for this beetroot milk, it's fine to use cooked instead. Be sure the cooked beets don't have any savory seasonings added to them. It is fine to use leftover sweet flavored ones that perhaps you added honey or maple syrup to. It's best to add plain flavored ones instead.
Most grocery stores now sell packaged cooked beets that you can also use instead of preparing them yourself. However, be aware that sometimes there are additional flavors and additives in those packaged beets.
🍓 Strawberry Health Benefits
Strawberries are a berry rich in vitamin. One cup of strawberries contains more vitamin C than one orange. Vitamin C helps boost collagen production. So, your skin will radiate when you eat more strawberries. Plus, you will have stronger, more hydrated skin.
This delicious berry contains ellagic acid. Ellagic acid helps stabilize blood sugar levels. This is why this berry is considered a low sugar fruit.
Strawberries are fantastic for maintaining your eyesight due to high antioxidants, which help fight free radical damage. They are also heart-healthy due to phytochemicals and flavonoids that help keep your cardiovascular system running optimally.

🩺 Health Benefits of Beets
Strawberry beetroot milk is an iron rich milk high in valuable vitamins and minerals. It's a healthy start to any day! Beet contains many vitamins and minerals, including calcium, potassium, magnesium, and vitamin C.
Health benefits of beets by blending them into a milk recipe include lowering blood pressure, fighting inflammation, improving digestive health, and cancer-fighting antioxidant properties.
They are fairly low in caloric intake, but also nutrient-dense, making them a perfect option for those mindful of watching their weight. Beet intake is also linked to a reduced risk of chronic diseases like heart disease and cancer. This vegetable is considered heart healthy and great if you are following the Dash Diet eating plan.
Beets are also high in fiber, which can help improve blood sugar levels throughout the day. The rich phytochemical content can have a positive impact on insulin and glucose levels within the body (1).
Beet juice helps with blood flow. If you eat beets an hour before a workout, it will help dilate your blood vessels, which in turn increases the amount of oxygen delivered to your muscle.
❓ What is a Korean Strawberry Milk?
Korean strawberry milk is a popular Korean drink made with simply strawberries, milk, and sugar. I have updated my version of this delicious drink with healthier sources of sugar in beets and dates. This not only increases the iron intake, but beets are a natural sugar source that naturally sweetens up the milk.
❓ Why You Should Make a Strawberry Beet Milk Recipe?
Strawberry beet milk is fabulous for helping with those suffering from anemia, because of its high iron content. They are also a great source of betaine, which is used by the body to convert homocysteine into methionine and cystathionine. High levels of homocysteine can cause heart disease, stroke and other cardiovascular diseases.
In addition, they are also a good source of folate, which is an important nutrient for pregnant women to help prevent birth defects.
