You will fall in love with this bright, refreshing, and healthy lemon and coconut shake. Bonus: I use the whole lemon in this lemon smoothie recipe. I also love this simple lemon smoothie first thing on a hot summer morning, and it's great for anyone following the autoimmune protocol diet (AIP).

    Lemon Smoothie Recipe That Tastes Like Lemonade - Easy & Refreshing 

    This healthy lemon coconut shake is actually pretty easy to make. The tropical summer flavor will transport, and bonus, this coconut shake is healthy too. All you need are a few simple ingredients and a blender.

    How to Make a Delicious Coconut Shake

    You only need to blend up a few simple ingredients, and you will enjoy this drink in only a few minutes. The recipe below will make one shake, but you can double or triple the ingredients if you're serving more people.

    You will need some simple, yet accessible ingredients to make this delicious lemon smoothie. One sweet apple, ripe banana, celery, avocado, coconut cream, collagen powder, sea salt, water, and of course fresh lemons. For this lemon shake recipe, you blend the whole flesh of the lemon, which makes this super lemony. I truly think you will fall in love with this smoothie recipe made with fresh lemon.

    Can You Make This Lemon Smoothie Vegan?

    Surprise, this lemon smoothie recipe is already vegan friendly. I chose ingredients that will work for most diets that people follow for health or ethical reasons.

    How to Remove the Rind from a Lemon?

    So, what is the best way to remove the rind from a lemon when you want to use the flesh of the lemon too? Well, it is actually very easy to do. All you need to do is use a sharp knife and cut off the ends of the lemon, then cut it in half lengthwise.

    When you have done that, you need to cut out the white pith from the inside of the lemon. The easiest way to do that is by cutting a V shape in it, and then pulling it out with your fingers.

    Be sure to remove the seeds, and you can now use the entire lemon in this delicious lemon coconut creme smoothie recipe.

    Coconut Milk vs. Coconut Cream

    I prefer coconut cream in this lemon smoothie recipe, because it is much more satisfying. The additional fat content of the cream also helps those suffering from autoimmune diseases.     Let's Make a Healthy Lemon Smoothie Recipe

    LEMON SMOOTHIE INGREDIENTS

    • 1 sweet apple
    • 1 banana
    • 2 stalks celery, chopped
    • ½ avocado
    • Juice and flesh of 1 lemon
    • ½ cup BPA-free canned coconut cream
    • 2 scoops collagen powder 
    • Pinch sea salt
    • Water to thin

    DIRECTIONS:

    Add all ingredients to a high-speed blender. Blend until smooth, then serve.

    RECIPE NOTES:

    This recipe can easily be doubled if you want to share with a friend or family member.
