Simple Massaged Kale Salad
Equipment
Ingredients
- 4 cups kale (Chopped)
- 1 cup carrots (Shredded)
- 1 cup celery (Chopped)
- ยฝ cup fennel, fresh (Thinly sliced)
- 1 cloves garlic, fresh (Minced)
- ยผ cup extra virgin olive oil
- 1 large lemon, juice (Juiced)
- ยผ cup pine nuts
- 1 pinch sea salt (To taste)
- 1 pinch black pepper, ground (To taste)
Instructions
- Add kale to a large mixing bowl along with lemon juice, garlic, olive oil, salt, and pepper.
- Using clean, bare hands, massage the kale until it is wilted (about 2 to 3 minutes).
- Once the kale is ready, top your salad with carrots, celery, fennel, and pine nuts. No extra dressing is needed.

🍴 Kale Salad Variations
- Higher Protein - Add additional protein of choice, like grilled chicken, fish, or tofu.
- Nuts - Swap out the pine nuts for whatever nuts you have on hand. Walnuts go great in this massaged kale salad recipe. I also like to use sprouted pumpkin seeds. If you have a nut allergy, try sunflower seeds instead.
