This easy recipe is full of good for you ingredients that you probably aren't used to in a traditional chili recipe. I added sweet potato and zucchini to bump up the nutritional intake of this nourishing one pot paleo recipe.
🥣 Ingredients to Make the Best Paleo Beef and Sweet Potato Chili
- Ground Beef - I like to use a lean version 95%, but feel free to use 80% if you don't mind draining extra fat.
- Zucchini - I always add as many veggies as possible, and zucchini has lots of vitamins and minerals. So, I highly recommend you add zucchini to all your recipes.
- Sweet Potatoes - You wouldn't typically think of adding sweet potatoes to a chili recipe, but this one brings out a delicious sweetness to the recipe.
- Red Bell Pepper - I like the red bell peppers because they are the sweetest. As bell peppers ripen, they change color, and the green tends to be a bit more bitter.
- Mushrooms - Anywhere I can sneak in some vitamin D rich mushrooms, I find a way. They will definitely help boost your immunity during the colder months.
- Kale - I like the curly version of kale in this recipe, because it holds up nicely and is easy to get more nutrients into your diet.
- Carrots - Please don't leave out the carrots, because they add a natural sweetness to the chili that perfectly balances out the spices in this paleo chili recipe.
- Tomatoes - Canned diced tomatoes are perfect in this paleo beef chili recipe
- Spices - I came up with the perfect spice blend to make the best chili recipe. It consists of cayenne pepper, red pepper, garlic powder, cumin, oregano, and salt & pepper.

How to Make the Best Paleo Beef and Sweet Potato Chili
Equipment
- 1 Slow Cooker (Optional)
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 pound beef, ground (Extra lean)
- 1 cup zucchini (Diced)
- 1 cup onion, white (Diced)
- 4 cups tomatoes (Diced)
- 3 cups sweet potato (Diced)
- 2 cups bell pepper, red diced
- ยฝ cup mushrooms (Sliced)
- 2 cups kale (Rough chopped)
- 1 cup carrots (Peeled and sliced)
- 1 tablespoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon oregano, dried
- 1 teaspoon cumin, ground
- 1 bay leaf, dried
- 1 dash black pepper, ground (To taste)
- 1 dash sea salt (To taste)
Instructions
- Heat olive oil in a large soup pot. Add diced onion and cook until translucent.
- Add beef and spices. Cook until beef is brown. Add diced tomatoes, and add an additional can of water to the pot. Add sweet potato, mushrooms, carrots, and the rest of the spices.
- Lower heat and simmer for about 20 minutes, stirring occasionally.
- Add zucchini and red pepper. Cook for another 10 minutes. Add kale, salt, and pepper, and cook for 10 more minutes.
- Remove bay leaf. Serve and enjoy!
Crock Pot or Slow Cooker Instructions:
- Add all ingredients except the zucchini to a crock pot or slow cooker.
- Cook on high for 6 to 8 hours or low for 4-6 hours.
- The last thirty minutes before cook time is up, add in the diced zucchini. If you add it before, it will become mushy and fall apart.
- Remove the bay leaf and serve hot.
