If you were a Barbie fan growing up, then this color is calling your name. Fun fact about me: I hated the color pink growing up. I was more of a peach colored fan, especially since my favorite fruit was peaches. But I grew quite fond of the color pink as I got older.
This spring, all the tropical flavors inspire me to create a tropical spring smoothie. I love using pitaya, otherwise known as dragon fruit, in my smoothies for the extra boost of antioxidants.

This dragon fruit tropical smoothie is a delicious and nutritious drink that combines the goodness of dragon fruit and the sweetness of berries.
This smoothie is not only refreshing but also packed with vitamins, minerals, and antioxidants.
- Dragon Fruit - You can buy a whole dragon fruit and scoop out the flesh, or buy prepackaged dragon fruit in your freezer section of the grocery store.
- Raspberries - They provide the body with collagen-building nutrition from vitamin C, which helps with anti-aging.
- Banana - Adds sweetness, prebiotic power, vitamins, and minerals.
- Coconut Cream - Great healthy fat option if you are following the AIP autoimmune diet protocol for help with your autoimmune disease.
- Milk of Choice - I like unsweetened almond milk the best.
- Greek Yogurt - I like the higher protein content inside Greek yogurt, but you can swap it for a vegan, dairy-free yogurt instead.
- Coconut Water - Great for skin health and constipation. Magnesium in coconut water helps relax your muscles in your digestive tract, which helps move things along to help chronic constipation issues.
- Vanilla Protein Powder - I highly recommend my E*Y*N plant-based vanilla protein powder. The vanilla adds to the depth of flavor in the recipe.

🐉 🍌 To make this smoothie, you will need a handful of raspberries, banana, and dragon fruit.
💪 Next, you'll add a scoop of your favorite plant-based protein powder to increase the protein grams in this recipe.
🥛 To add some creaminess to the smoothie, you can add some Greek yogurt, like I did for this recipe. Not only does this increase the protein, but you also add extra calcium.
🍯 I don't find this smoothie needs any additional sweeteners, but if you want to sweeten the smoothie, add a drizzle of honey or a date. Alternatively, if you prefer a lower sugar option, you can use a natural sweetener like stevia or skip sweeteners altogether -- the natural sweetness from the berries and banana can be enough.
🥶 I prefer not to add any additional sweetener, as I find the banana and berries provide enough sweetness. Finally, blend all the ingredients together until smooth and creamy. You can also add some ice cubes if you prefer a colder and thicker consistency.

Pink Power Dragon Fruit Smoothie
Equipment
- 1 Blender
Ingredients
- 1 dragon fruit (pitaya)
- 1 cup raspberries (fresh or frozen)
- ยผ small banana (frozen)
- ยฝ cup coconut water
- ยฝ cup milk of choice
- 1 tablespoon coconut cream
- 1 scoop vanilla protein powder
- 2 tablespoons Greek yogurt (I used dairy-free version)
Instructions
- Add the ingredients to a blender. Blend until smooth.
- Serve as is or add your favorite toppings. I like fresh mint leaves and a sprinkle of unsweetened coconut flakes.

I like to meal prep my ingredients in smoothie bags without any liquids. Then the day I want a smoothie, I simply pour the items from the bag into my blender, add milk or water, and blend away.
