This simple roasted beet salad recipe is a hearty energizing lunch or dinner recipe full of many textures and flavors. If you want a salad for energy that is made with delicious beets, and other hearty vegetables, this is the recipe for you.

Ingredients for Beet Salad Recipe
Beets: You can use red, golden, or even pink beets, which will work in this recipe. You can even try a mixture of various different kinds.
Apples: I like the delicious flavor of a Granny Smith apple in this recipe, because of it's crisp, tart, and sweetness it adds. If you don't have Granny Smith apples, you can swap it for whatever apple you have on hand.
Fresh Mixed Greens: Any mixture of fresh greens will work as the base of this simple beet salad. I like a mixture of arugula and spinach, but this is also perfect made with a heartier green like kale. Kale would be perfect if you want to meal prep this in advance, as the kale leaves are heartier and don't wilt during the week.
Cauliflower: Cauliflower is a delicious cruciferous vegetable full of antioxidants, which also help reduce inflammation in the body. If you don't have cauliflower on hand, you can swap with Brussels sprouts. Get creative and experiment with your recipes.
Chickpeas: Canned chickpeas not only add extra fiber, but another layer of texture to this salad recipe. Be sure to drain and rinse well to reduce the sodium content.
Pine Nuts: I highly recommend using pine nuts, however, walnuts or pecans will also work well too.
Almond Butter Vinaigrette Salad Dressing: This easy to make vinaigrette contains almond butter, olive oil, maple syrup, cinnamon, and apple cider vinegar.

Simple Roasted Beet Salad Recipe
Ingredients
- 2 Sweet Potatoes (Chopped into bite-sized pieced)
- 1 large Beet (Chopped into bite-sized pieces)
- ¼ head Cauliflower (Chopped into florets)
- 1 cup Canned Chickpeas (Drained and rinsed)
- 1 Granny Smith Apple (Cored and chopped)
- 1 cup Mixed Fresh Greens (Arugula, Spinach, or Kale)
- 2 tablespoons Avocado Oil
- ¼ cup Pine Nuts (Toasted) Can substitute with Toasted Walnuts or Pecans.
Almond Butter Vinaigrette Salad Dressing
- ½ teaspoon Ground Cinnamon
- 1 tablespoon Maple Syrup
- 3 tablespoons Almond Butter
- 1 tablespoon Extra Virgin Olive Oil
- 1 tablespoon Apple Cider Vinegar
- 1 pinch Sea Salt (To taste)
- 1 pinch Ground Black Pepper (To taste)
Instructions
- Preheat oven to 425 degrees Fahrenheit.
- Assemble chopped potatoes, cauliflower and beet on a baking sheet. Drizzle with avocado oil. Season with cinnamon, salt, and pepper. Bake for 20-25 minutes or until soft and edges are caramelized.
- Arrange apple, chickpeas, spinach, and pine nuts in a large bowl. Once potatoes, cauliflower, and beets are done roasting, add those as well.
- To make the dressing, whisk together the almond butter, maple syrup, olive oil, apple cider vinegar, sea salt, and black pepper until well blended.
- Pour over dressing salad. Do not over-mix, as beets will stain other ingredients pink. Serve topped with toasted almonds or pine nuts.
