- Ground Beef - For this ginger beef stir fry recipe, I use ground beef and like to use a leaner cut of beef at 93%, but you can also use the 85% kind, but the fat content will increase.
- Ginger - I personally love the fresh ginger in this recipe, but if you don't have any, please use ground ginger. But please don't skip the ginger, as it is the key flavor to this dish.
- Garlic - I highly recommend using fresh garlic in this recipe, but you can substitute with a ยฝ teaspoon of ground garlic instead.
- Spaghetti Squash - This veggie is the perfect substitute for traditional noodles, while increasing your vitamin and mineral content. Spaghetti squash noodles are a love carb option substitute for regular noodles.
- Dried Dates - I love dates for their vitamin and mineral content. They add a slight sweet flavor that balances out the spice in this recipe.
- Pine Nuts - The pine nuts add a bit of texture and a buttery, sweet flavor to the dish.
- Red Chili Paste - This ingredient is important for that spicy flavor. I love the Thai Kitchen brand of roasted red chili paste.
- White Onion - I love the gentle taste of a white onion in this recipe. You can finely dice this or even grate it if you or your family doesn't like the taste of onion pieces.

I chose spaghetti squash noodles to increase the fiber, vitamins, and minerals in this dish, while also keeping it lower in carb. Spaghetti squash is a great gluten-free alternative to traditional spaghetti noodles. It is my go-to replacement for traditional spaghetti pasta.
So, if you don't already know this, I have celiac disease. It is important for people with celiac disease to avoid foods containing gluten. I prefer to reach for naturally gluten-free options over the prepackaged gluten free options that tend to be loaded with unnecessary additives.
Spaghetti squash is loaded with vitamin C, vitamin B6, manganese, betacarotene, and fiber. It has a mild flavor that makes it perfect to top with any seasonings or sauces of choice. One cup of cooked spaghetti squash has about 42 calories.

It takes about one hour to make this ginger beef recipe dish. This includes the time it takes to prep the ingredients, cook the ground beef, and spaghetti squash. You can easily meal prep this ahead of time.
I like to meal prep the spaghetti squash and ground beef separately, so I can mix and match ingredients throughout the week. This is one of my meal prep hacks to make planning meals easier.
Meal prep several protein choices, carbohydrate choices, and fiber rich vegetables. Then throughout the week, simply make sure you add a protein, carb, and veggie to each meal.

Spicy Garlic Ginger Beef Spaghetti Squash
Equipment

- 1 medium spaghetti squash
- 4 ounces beef, ground
- 2 tablespoon extra virgin olive oil
- ยฝ onion, white (Finely chopped)
- 1 cloves garlic, fresh (Minced)
- 1 1-inch ginger, fresh (Peeled and finely chopped)
- 1 teaspoon red chile paste
- 1 tablespoon dates, Medjool
- ยผ cup pine nuts
- 1 handful spinach (Raw)
Optional Toppings
- cilantro, fresh
Instructions
- Preheat the oven to 400 degrees. Slice the squash in half. Scoop out the seeds.
- Next, rub the squash with one tablespoon of oil. Place the squash cut side down in a 9 by 13 inch baking dish or baking sheet. In addition, add one splash of water.
- Roast the squash for 45 minutes. Remove from oven and set aside to cool.
- Next, in a nonstick skillet, heat up one tablespoon olive or coconut oil. Cook the onions for 3 minutes. Add in the ground beef and season with a pinch of salt.
- Break the meat into tiny pieces and cook for a few minutes until the meat is browned and cooked through.
- Next, add the garlic, red chili paste, and fresh ginger. Cook for an additional minute.
- Stir in the spinach, pine nuts and dates. Cook for 30 seconds.
- Finally, scrape out the inside of the squash. The squash will resemble strands of pasta. Place into a medium sized serving bowl.
- Lastly, toss the ground beef mixture with the spaghetti squash and serve. Top with fresh cilantro.
