What do you do when all you want is sushi, but you want to make it right at home and quickly? You eat one of these spicy tuna sushi cucumber boats! This quick and easy lunch is the option for you. They are loaded with flavorful and filling lean protein to keep you satisfied all day long. An easy low carb spicy tuna recipe made from canned or packaged tuna prepared in only 5 minutes.

Make Spicy Tuna at Home
Did you know you can make spicy sushi tuna in your kitchen at home, simply by using canned or packaged tuna? That's right. I show you how easy it is to make spicy tuna with only a few ingredients by taking that canned tuna and transforming it into an easy lunch recipe. Ingredients to Make Spicy Tuna Sushi:
Tuna: You need a high quality canned tuna or tuna packet. I like the brand, Wild Planet because the quality and taste are suburb. High in protein and Omega-3 fatty acids.
Mayonnaise: Any mayonnaise will work in this recipe to make the spicy mayo, but I like Helmann's vegan mayonnaise or Primal Kitchen brand the best.
Cauliflower Rice: Prepared cauliflower rice is the best option if you want to keep this low carb. You can also substitute regular rice, like homemade coconut rice.
Sriracha or Hot Sauce: This is used to flavor the tuna and to make the spicy Sriracha mayo. I used Cholula hot sauce because I ran out of Sriracha, but Sriracha sauce is best.
Cucumbers: I prefer the longer English cucumbers for this recipe. Of course, any cucumber will work too.
Gluten-Free Coconut Aminos or Gluten-Free Tamari Sauce: To ensure you make a gluten-free recipe, use gluten-free tamari or coco aminos.
Start by making the spicy mayonnaise first. In a bowl, combine the mayo and one teaspoon of either hot sauce or Sriracha.
In a separate mixing bowl, combine the tuna, coconut amino, black pepper, and other teaspoons of sriracha sauce.
Cut the cucumbers lengthwise in half. Scoop out the seeds and some of the middle.
Spread rice evenly over the cucumber. top with tuna mixture. Top with spicy mayo.

Spicy Tuna Sushi Cucumber Boats
Ingredients
- 1 3 -ounce packet or can Albacore Tuna (I like Wild Planet brand)
- 1 teaspoon Coconut Aminos (Can use gluten-free tamari soy sauce of choice)
- 1 large English Cucumber
- 1 tablespoon Mayonnaise
- 2 teaspoons Sriracha (Can substitute with your favorite hot sauce of choice), divided teaspoons
- 1 pinch Ground Black Pepper
- ¼ cup Cauliflower Rice (Cooked and prepared in advance)
Optional Toppings:
- Sesame Seeds (Toasted)
- Seaweed Sheets (Crumbled)
- Avocado (Sliced)
Instructions
- Mix the mayonnaise and 1 teaspoon Sriacha. Set spicy mayo aside.
- In a mixing bowl, combine tuna, tamari, pepper, and Sriacha.
- Cut the cucumbers lengthwise in half. Scoop out the seeds and some of the middle. Spread rice evenly over the cucumber. top with tuna mixture. Top with spicy mayo,
- Serve topped with optional toppings like sesame seeds, avocado, and seaweed sheets.
