To make this sun-dried tomato chicken recipe, you will simply need to gather a few key ingredients and cook up an easy 30-minute dinner recipe.
- Chicken Thighs - Sometimes I like to switch things up and use chicken thighs instead of chicken breasts. However, this recipe also works well with chicken breasts.
- Sun-Dried Tomatoes - Great source of antioxidants, including lycopene, which can help protect the skin from damage that the sun may cause.
- Coconut Milk - Good source of potassium to help regulate blood pressure. Coconut milk also contains lauric acid, a medium-chain fatty acid shown to have anti-inflammatory effects on the body.
- Avocado Oil - Research has shown avocado oil has an anti-inflammatory effect, reducing CRP. However, you can also use extra-virgin olive oil, which is also perfect for an anti-inflammatory diet.
- Bone Broth - Great for gut health and adds tons of deep flavor. Try my homemade bone broth recipe, or you can use your favorite brand of broth.
- Green Onion - I like to use green onions for the color and milder flavor, but a white onion is perfect too.
- Parsley- I like fresh parsley for a lot of my chicken recipes. If you don't have fresh, you can add some dried parsley for added flavor. I highly suggest you get used to using fresh herbs because they not only elevate the flavor of your dish but bring additional freshness to the meal.
- Cauliflower Rice - Cruciferous veggies like cauliflower are great for gut health, but you can swap it out with broccoli rice too. Instead of a low-carb option, serve with cooked chickpea pasta.

Here's how to make this easy, healthy, marry me chicken recipe.
In a medium skillet, heat avocado oil over medium heat. Season chicken thighs with salt, pepper, and garlic powder. Add to skillet.
Cook until well browned on one side, approximately 8 minutes, then flip. Add sun-dried tomatoes, bone broth, and coconut milk to the skillet. Cook an additional 8 to 10 minutes or until chicken is cooked through.
Remove from heat and mix in the fresh parsley and green onions. Allow 3 to 5 minutes to sit for sauce to thicken. Serve over cauliflower rice.

- 1 cup bone broth (Try my homemade bone broth recipe)
- ยฝ cup coconut milk (full fat, half cream on top)
- 2 tablespoons parsley, fresh (chopped)
- 3 stalks onions, green (chopped)
- 2 cups cauliflower rice (cooked)
- 1 pinch sea salt (to taste)
- 1 pinch black pepper, ground (to taste)
Instructions

You get a full dinner or lunch meal without much prep. I like to pair this sun-dried tomato chicken recipe with cauliflower rice. For leftovers as lunch, I also make a bed of massaged kale and top with this chicken and cauliflower right over the top.
You can also serve this with brown, wild, or white rice. It's also perfect over gluten-free pasta. I have even served this with gluten-free cornbread on the side. Simply delicious.
