I was inspired by my love of muffins, especially my orange almond muffin recipe. I combined the mixed berry flavor from my simple vanilla white bean & berry smoothie into a muffin recipe, and there you have it. The most delicious superfood muffins you will ever taste.
This blueberry muffin recipe is pretty special, because I mix in cranberries and raspberries. It's dairy-free, egg-free, and gluten-free, but full of delicious nutrient-dense flavor. But, it is full of good for you ingredients, from healthy fats, superfood berries, and apples.

Mixed Berry Super Food Muffins
Equipment
Ingredients
- ยผ cup cranberries, fresh
- ยผ cup blueberries
- ยผ cup raspberries
- 1 apple, red delicious (Peeled, cored, chopped)
- ยผ cup coconut oil (Melted)
- ยพ cup coconut milk
- โ cup maple syrup
- 1 zest lemon, juice
- 2 tablespoons lemon, juice
- 2 tablespoons ginger, fresh (Peeled and grated)
- ยฝ cup flaxseed, ground
- 1 ยฝ cups all-purpose flour, gluten-free
- ยฝ cup oat flour
- 2 tablespoons almonds, raw
- ยผ cup chia seeds
- 2 tablespoons walnuts
- 1 teaspoon sea salt
- 2 teaspoons baking powder
- ยฝ teaspoon baking soda
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Lightly spray the inside of a 12 muffin tin with coconut oil.
- In a medium-sized microwave-safe bowl, place the apple chunks and cover them with a paper towel or plastic wrap. If you use plastic wrap, poke a few holes in the top of the wrap to allow steam to escape. Microwave the apple for 1 ½ minutes. Remove and mash slightly with a fork.
- Next, add in the coconut oil, maple syrup, lemon zest, lemon juice, fresh ginger, coconut milk, and ground flaxseed. Stir to combine. Set the bowl aside.
- In a separate bowl, combine the dry ingredients: gluten-free flour, oat flour, chia seeds, almonds, walnuts, baking powder, baking soda, and salt.
- Now add the wet ingredients to the dry ingredients. Stir until all combined, but don't overmix. Next fold in the berries.
- Divide the batter equally among the muffin cups. Bake for 16 to 18 minutes or until golden brown. Remove from the oven and let cool for 5 minutes, then remove from the muffin tin. Enjoy these delicious superfood berry muffins.
