Thai Crunch Salad Bowl Recipe
Equipment
Ingredients
- ยผ cup chili-lime dressing (Recipe follows)
- 2 tablespoons almond butter (Or Sunflower Seed Butter)
- 2 tomatoes (Quartered)
- ยผ cup walnuts (Chopped)
- 1 bell pepper, red (Thinly sliced)
- 4 cups cabbage
- ยผ avocado (Thinly sliced)
- 2 tablespoons basil, fresh (Chopped)
- 2 tablespoons cilantro, fresh (Chopped)
- 2 tablespoons mint leaves, fresh (Chopped)
- 1 scallions (Thinly sliced)
Optional Toppings
- sesame seeds
- protein of choice, cooked (Extra Protein Option)
Instructions
- Place all salad ingredients into a large salad bowl.
- Whisk together the dressing and almond/sunflower butter in a large mixing bowl. Toss in all remaining ingredients and mix well before serving.

Chili Lime Thai Salad Dressing

- 2 lime (Juiced)
- 1 zest lime
- ยผ cup apple cider vinegar
- 1 tablespoon tamari, gluten-free
- 1 tablespoon honey, raw
- โ cup extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin, ground
- ยผ teaspoon chili powder
- 1 pinch sea salt (To taste)
Instructions
- Combine all ingredients in a mason jar with a lid. Shake well until smooth. Store in an airtight container for up to 7 days in the refrigerator.
