Step 2: Bloom the Gelatin
In a large mixing bowl, sprinkle gelatin over ½ cup of water. Let sit for 5 minutes to bloom.
Step 3: Make the Syrup
In a saucepan, combine the remaining ½ cup of water, honey, and salt. Heat over medium, stirring until it reaches a gentle boil. Simmer for 5-7 minutes until slightly thickened.
Step 4: Whip the Marshmallows
Slowly pour the hot syrup into the bloomed gelatin while mixing on low speed with a hand or stand mixer. Gradually increase the speed to high, beating for 10 minutes until the mixture is fluffy and forms stiff peaks.
Mix in vanilla extract during the last minute of whipping.
