Vegan Coconut Matcha Energy Bliss Balls
Ingredients
- 2 pitted dates
- 1 ½ teaspoons matcha powder
- ½ teaspoon vanilla extract
- ½ cup unsweetened shredded coconut
- ⅓ cup melted coconut butter
- Handful of almonds raw (about 10-12).
Instructions
- 1. Place all ingredients in a food processor or high speed blender, and blend until well combined. The mixture should be a bit crumbly.
- 2. Place the bowl in the refrigerator or freezer for 15 minutes to make it easier to roll out. Scoop out about 1 tablespoon of mixture and roll into balls. Enjoy.
- Optional: Roll in additional shredded coconut or dip into melted chocolate. If you dip into melted chocolate, put the bliss balls back into the freezer to ensure that the chocolate hardens a bit.
