Vegan Coconut Matcha Energy Bliss Balls
Ingredients
- 2 pitted Dates (pitted)
- 1 ½ teaspoons Matcha Powder
- ½ teaspoon Vanilla Extract
- ½ cup Shredded Coconut (unsweetened)
- ⅓ cup Coconut Butter (melted)
- 1 handful Raw Almonds (about 10-12).
Instructions
- Place all ingredients in a food processor or high speed blender, and blend until well combined. The mixture should be a bit crumbly.
- Place the bowl in the refrigerator or freezer for 15 minutes to make it easier to roll out. Scoop out about 1 tablespoon of mixture and roll into balls. Enjoy.
- Optional: Roll in additional shredded coconut or dip into melted chocolate. If you dip into melted chocolate, put the bliss balls back into the freezer to ensure that the chocolate hardens a bit.
STORAGE TIPS:
- Store in the fridge until you are ready to eat. These bliss balls are good stored in the fridge for up to a week and you can freeze for 3 months.
