Spicy Garlic Ginger Beef Spaghetti Squash

Instructions
 

  • Preheat the oven to 400 degrees. Slice the squash in half. Scoop out the seeds.
  • Next, rub the squash with one tablespoon of oil. Place the squash cut side down in a 9 by 13 inch baking dish or baking sheet. In addition, add one splash of water.
  • Roast the squash for 45 minutes. Remove from oven and set aside to cool.
  • Next, in a nonstick skillet, heat up one tablespoon olive or coconut oil. Cook the onions for 3 minutes. Add in the ground beef and season with a pinch of salt.
  • Break the meat into tiny pieces and cook for a few minutes until the meat is browned and cooked through.
  • Next, add the garlic, red chili paste, and fresh ginger. Cook for an additional minute.
  • Stir in the spinach, pine nuts and dates. Cook for 30 seconds.
  • Finally, scrape out the inside of the squash. The squash will resemble strands of pasta. Place into a medium sized serving bowl.
  • Lastly, toss the ground beef mixture with the spaghetti squash and serve. Top with fresh cilantro.
