How to Make the Best Paleo Beef and Sweet Potato Chili

Paleo beef and sweet potato chili recipe is the best fall meal idea in my home. This is such a hearty and satisfying meal, and it’s so quick and easy to put together.

  • Heat olive oil in a large soup pot. Add diced onion and cook until translucent.
  • Add beef and spices. Cook until beef is brown. Add diced tomatoes, and add an additional can of water to the pot. Add sweet potato, mushrooms, carrots, and the rest of the spices.
  • Lower heat and simmer for about 20 minutes, stirring occasionally.
  • Add zucchini and red pepper. Cook for another 10 minutes. Add kale, salt, and pepper, and cook for 10 more minutes.
  • Remove bay leaf. Serve and enjoy!

Crock Pot or Slow Cooker Instructions:

  • Add all ingredients except the zucchini to a crock pot or slow cooker.
  • Cook on high for 6 to 8 hours or low for 4-6 hours.
  • The last thirty minutes before cook time is up, add in the diced zucchini. If you add it before, it will become mushy and fall apart.
  • Remove the bay leaf and serve hot.
