🥣 What Ingredients Do You Need to Make Healthy, Roasted Sweet Potato Rounds Bites?
Sweet Potatoes - Obviously, you need whole sweet potatoes or yams for this recipe. Get larger-sized sweet potatoes to create larger rounds. The more room for the delicious toppings. 😀
Tahini - This ingredient is truly special. I used the Mighty Sesame brand of squeezable tahini. It's also a perfect addition drizzled over homemade pancakes.
Date Syrup - This great natural sweetener is full of magnesium, iron, folic acid, potassium, and phosphorus. You can substitute maple syrup or honey (if you use honey, it won't be a vegan recipe). Date syrup also adds a bit of fiber, because it's made from mixing dates with hot water. A significant amount of the fiber remains in the syrup mixture, which makes it great as a gut-healthy sweetener.
Pistachios - Ahh, wonderful pistachios. I topped these sweet potato rounds with chopped roasted & salted pistachios by the brand Wonderful Pistachios.
Coconut Oil - I brushed the tops of the sweet potatoes with coconut oil, but feel free to use olive oil if that is all you have on hand. However, the coconut oil adds another layer of flavor to give these sweet potato bites that delicious taste.
Pumpkin Pie Spice Mix - This is crucial to most holiday recipes, but you need it to flavor the base of the sweet potato rounds.
Sea Salt - A pinch will do you. This helps to bring out the sweetness of all the ingredients.
Optional Ingredient - Top with my Cranberry Apple Chia Jam. These sweet potato bites are tasty on their own, but to increase the fiber even more, top with my chia jam recipe. It adds another layer of sweetness and tartness to this easy, vegan Thanksgiving appetizer.

This delicious root vegetable has wonderful health and nutritional benefits. Sweet potatoes are at the top of my list when it comes to ingredients that I always keep on hand.
To start with, this healthy complex carbohydrate source is a great source of vitamin A and beta-carotene. One cup of cooked sweet potato provides 769% of your daily needs of vitamin A.
This vitamin also helps regenerate collagen and keep your skin smooth. In addition, vitamin A helps support your immune system, which is especially important during the colder months.
You also get 27% of your daily recommended value from only one cup of cooked sweet potato. I love making sweet potato toast or a delicious hash to pair with eggs during breakfast.

Sweet potatoes are also a great source of potassium. Potassium is an important electrolyte to help balance the salt in your body. This is important during the holiday season because oftentimes holiday food tends to be loaded with excess sodium levels.
❓ Why Tahini is a Healthy Choice for These Sweet Potato Rounds?
Tahini is a paste made from ground sesame seeds. It is typically used in Middle Eastern dishes. It's rich in important nutrients like selenium, fiber, copper, and phosphorus.
Tahini is also a great option if you or someone you know suffers from a nut allergy. It's a delicious nut-free nut butter that tastes amazing, drizzled over so many ingredients.
I love to top my homemade pancakes or waffles with tahini and date syrup. That is what inspired this sweet potato bite recipe.
I love the brand by The Mighty Sesame because it comes in a convenient squeezable tube. Tahini paste is perfect to add that creaminess and nuttiness flavor to hummus too.
Sesame seeds, which is the key ingredient in tahini paste, are loaded with selenium. Selenium is a mineral shown to help decrease inflammation and may even increase immune function (1).

Healthy Sweet Potato Rounds

Ingredients
- 4 large sweet potato
- ยผ cup tahini paste
- ยผ cup date syrup
- ยฝ cup pistachios (Finely chopped)
- 1 teaspoon pumpkin pie spice
- 2 tablespoons coconut oil
- ยผ teaspoon sea salt
Optional Ingredients:
- โ cup cranberry apple chia seed jam (For Topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with a piece of parchment paper.
- Leaving the skin on your sweet potatoes, slice them into (12) 1-inch rounds. Make sure you opt for larger sweet potatoes to ensure larger sliced rounds. Tip: I reserve the smaller end pieces to cut up for a breakfast hash.
- Place your slices on the lined parchment paper. Brush the top of your slices with coconut oil. Bake for 20 minutes in a 375-degree oven.
- Remove the rounds from the oven and sprinkle lightly with the pumpkin pie spice mix and sea salt.
- Next, top each slice with a drizzle of tahini and date syrup. Sprinkle chopped pistachios right over the top.
- You can choose to enjoy it as is or top it with a dollop of my cranberry apple chia seed jam.

You can slice the sweet potatoes a day earlier than the date you wish to serve them. However, don't bake the potatoes until the day of serving, or they will become a mushy mess in the refrigerator.
