Raw Vegan Raspberry Cheesecake Recipe
Makes 12 mini cheesecake cups.
INGREDIENTS
RAW CHEESECAKE CRUST INGREDIENTS
- 1 cup dates, pitted
- One and half tablespoons coconut oil
- 1 tablespoon flaxseed meal
- One cup raw almonds
- zest of one orange (½ tablespoon)
VEGAN RASPBERRY CREAM CHEESECAKE FILLING INGREDIENTS
- 2 cups raw almonds
- ⅓ cup maple syrup
- 1 cup raspberries
- ¼ cup orange juice
- ½ cup coconut milk from a can
- 1 teaspoon vanilla extract
- ¼ cup coconut oil, melted
- 1 scoop vanilla collagen powder
OPTIONAL VEGAN RASPBERRY YOGURT TOPPING INGREDIENTS
- 1 cup unsweetened coconut yogurt
- 1 to 2 teaspoons Goji Pink Dust (powdered Goji berries) *
- ¼ cup raspberries
- 2 tablespoons maple syrup
- ¼ teaspoon vanilla extract
DIRECTIONS
- In a food processor, blend the crust ingredients until well combined. Press the crust into either silicone muffin cups or a lined muffin tin. Place into the freezer to set up while you make the filling for the vegan cheesecakes.
- To make this delicious raspberry cheesecake filling, blend the filling ingredients until smooth. Top the crust with the cheesecake filling. Place back into the freezer to set up for at least 4 hours.
- To make the super food yogurt topping, combine all the ingredients in a blender and freeze for 1 hour.
- To serve, make sure you remove from the freezer about 30 minutes before eating. Top with the delicious raspberry yogurt topping and some fresh raspberries too.
HEALTHY DESSERT RECIPE TIPS
To make the Goji Pink Dust:
Simply grind up dried Goji berries in your food processor or blender until a fine dust is made. This is my secret ingredient that I add to many of my recipes, like oatmeal, smoothies, cookies, etc.
If you want a deeper vibrant pink color to the yogurt topping, use 2 teaspoons of the Goji berry powder, but if you want a lighter baby pink color, use less. I always start with less and add more until I reach my desired color.
It's best to thaw the cheesecakes for about thirty minutes to one hour to ensure the texture is firm creamy, instead of a frozen bar texture. This makes it much easier to cut into.
STORAGE TIPS
How long does this raspberry cheesecake last? It's always best to store these cheesecakes in the freezer for up to two months. Thaw for about 30 minutes to one hour before serving.
I don't advise storing in the refrigerator, or it will fall apart and melt into a mushy disaster.
