Vegan Raw Raspberry Cheesecake Recipe

Ingredients
Raspberry Cheesecake Filling Ingredients:
- 2 cups almonds, raw
- โ cup maple syrup
- 1 cup raspberries
- ยผ cup orange, juice
- ยฝ cup coconut milk
- 1 teaspoon vanilla extract
- ยผ cup coconut oil (Melted)
- 1 scoop Radiant Beauty Collagen Peptides
Raw Cheescake Crust Ingredients:
- 1 cup dates, Medjool (Pitted)
- 1 ยฝ tablespoons coconut oil
- 1 tablespoon flaxseed, ground
- 1 cup almonds, raw
- 1 zest orange (ยฝ tablespoon)
Raspberry Yogurt Topping Ingredients:
- 1 cup yogurt of choice (I used almond milk, unsweetened)
- 1 teaspoon pink goji berry dust (Powdered Goji berries) * see recipe below
- ยผ cup raspberries
- 2 tablespoons maple syrup
- ยผ teaspoon vanilla extract
Instructions
- In a food processor, blend the crust ingredients until well combined. Press the crust into either silicone muffin cups or a lined muffin tin. Place into the freezer to set up while you make the filling for the vegan cheesecakes.
- To make this delicious raspberry cheesecake filling, blend the filling ingredients until smooth. Top the crust with the cheesecake filling. Place back into the freezer to set up for at least 4 hours.
- To make the super food yogurt topping, combine all the ingredients in a blender and freeze for 1 hour.
- To serve, make sure you remove from the freezer about 30 minutes before eating. Top with the delicious raspberry yogurt topping and some fresh raspberries too.

- 1 cup goji berries (Dried)
Instructions
- First, grind the goji berries in a coffee grinder or food processor until a fine dust is formed.
- Next, sprinkle this pretty dust on any recipe where you would like to increase the antioxidant levels.
- If you want a deeper vibrant pink color to your recipes, use 2 teaspoons of the Goji berry powder, but if you want a lighter baby pink color, use less. I always start with less and add more until I reach my desired color.
