- Lemon - You can make a lemon salad without lemons of course. This vibrant fruit will add a tangy, flavorful taste that works well in this salad recipe.
- Olive Oil - I love to use extra-virgin oil oil in all my salads because of the light fresh flavor, but also the healthy fats it adds to the recipe. You can swap it for any avocado oil you have on hand. Learn more about avocado oils here.
- Garlic - You can use fresh garlic, but I chose to use garlic powder to increase the depth of flavor in this recipe. I have used both fresh garlic with garlic powder, and it comes out fantastic too.

Lemon Kale Salad Recipe

Ingredients
- 4 cups kale
- ยผ onion, red (Finely sliced)
- 8 stalks asparagus (Cut into 1-inch pieces)
- ยฝ cup peas
- ยผ cup pumpkin seeds
- โ avocado (Diced)
- ยผ cup tomatoes, sun-dried (Roughly chopped)
- ยผ teaspoon garlic powder
- 1 juice lemon, juice
- 3 tablespoons extra virgin olive oil
- 1 pinch sea salt (To taste)
- 1 pinch black pepper, ground (To taste)
Instructions
- In a large serving bowl, toss in the kale with a drizzle of olive oil, about 1-2 tablespoons. Squeeze half of a lemon over the top.
- Massage the kale leaves with the olive oil and lemon juice. Set aside to break down.
- Next, begin a quick saute over medium-low heat of the asparagus, sundried tomatoes, and peas with olive oil. Saute quickly for 5 minutes. This is just enough time to break down the veggies while still maintaining their nutrients. We want the asparagus to have a bit of crisp to it, not become a mushy mess.
- Squeeze ½ lemon into the pan. Add in the garlic powder, salt, and pepper to taste. Cook for another 3-4 minutes to allow the flavors to melt together.
- Toss the sauteed veggie mixture over the kale. Toss together the red onion, pumpkin seeds, and avocado. Serve immediately or place in the fridge for later.
